For most of my adult, married, being the person who makes dinner life – I have used boxed rice side dishes. They’re just easy and they taste good, and they help me out so much because side dishes are where I struggle! I guess I get better with age, because I’ve been trying to find ways to have more home cooked things added to our dinner time meals.
Like I mentioned, I struggle with side dishes. I have been known to make a main course for dinner, and that be all we have. Or, I will make chicken friend steak with rice and gravy, and that’s it. No veggies.. no real side dish. Anyways – I’m trying to be better in that area.
One evening I’m fixing baked chicken fajitas for dinner, and I realize I’m all out of my beloved boxed Mexican rice side dish. “Oh no! What am I going to do now?!” I quickly search Pinterest for an easy Mexican rice recipe, but I can’t find one that I really thought sounded GOOD. By this point, I felt like I had seen enough recipes to maybe just throw some things together and pray that it turned out okay. Magic happened, friends.
I’ve made it about 4 times since that day, and every time I secretly give myself a pat on the back for actually making something that tastes good enough to sell at a restaurant. (in my humble opinion) Without further adieu, I introduce to you a side dish that is very dear to my heart : Homemade Mexican Rice.
- 1.5 cups dry rice
- 2 to 2 1/4 cups chicken broth
- 1 cup salsa (any kind you prefer – mild, medium, hot!)
- 1/3 onion, chopped
- splash (or two) of lime juice
- 1 clove of garlic
- 2 Tbsp oil
- about 1 Tbsp McCormick Mexican Seasoning (this is my all time favorite, but you could substitute for any of YOUR favorite Mexican spices)
Directions : throw all the ingredients into a medium size sauce pan, cover, and cook! SO EASY!
I usually start the rice, then continue on to make the rest of my meal because the rice takes a little longer than normal to cook. I WILL ADD, that you have to sort of stir it occasionally so that it doesn’t stick and burn to the bottom of the pan. I’m not sure why it does this, maybe it only does it to me, but it happens!
I love to serve this with some cheese on top or stuff inside burritos. It’s SO GOOD, oh my goodness. It even makes for delicious leftovers! I’m not a big leftover person, so for me to say that really means something.
