Shelby’s favorite cookies are oatmeal raisin cookies. Growing up (and still today) those were never my favorite, so I hadn’t mastered making them for him. I tend to make him goodies he loves on special occasions, and had decided that oatmeal raisin cookies were next on the list. I love baking and spending time on yummy goodies, but for this occasion I guess I was feeling lazy and decided to grab an easy / quick fix from the grocery store. That ended up being the best decision, because they turned out GREAT and he loves them, and believe it or not I do too! I don’t know what it is, but they’re delicious, even to someone who never liked them before.
So what’s the secret? It’s Betty Crocker oatmeal cookie mix ( you can see it here ) and a box of raisins. The cookie mix calls for 1 stick of butter, 1 egg, and a tablespoon of water. I buy a box of raisins (usually store brand) and pour 1/2 to 3/4 box in, mix, and bake. THEY ARE SO GOOD!
I can whip these cookies up in less than 10 minutes. I make them BIG, so the cooking time is a little longer, but they’re so chewy and delicious. They’ve become our go-to for oatmeal raisin cookies.
I bet you could add chocolate chips instead of raisins, and they’d be amazing!
